RPMFusion is safe, Fedora Workstation (one with Gnome 3 WM) has an option of installing updated on reboot and snutdowns, but it is togglable. You would see a notification.

But even if Linux gives you the option to not install any updates for however long you want you should know that at some point you really should consider doing so regularily.

consider dnf-automatic ( sudo dnf install dnf-automatic ) then sudo nano /etc/dnf/dnf-automatic.conf to tweak as needed / desired (or use vi — my fav) and then enable | start it with 'sudo systemctl enable dnf-automatic.timer && sudo systemctl start dnf-automatic'
