Everything works fine, no issues, mine are related to the fact I use an HDD and GNOME Shell. It takes some time to boot up. A friend of mine is using the same setup, with LVM on LUKS on Fedora Rawhide with i3wm and it is faster than mine.

The fact that I can reuse /home is important to me. Ah! What the hell! Let's go LVM!

On Fedora, Anaconda the installer shows as default method LVM during partitioning, and if you want and encrypted install is easy as marking a checkbox.

A normal user can't mount drives

If during the install you did not added your user to the Administrators group It will ask for the root password. If you added your user to the Administrator group it will ask for your regular user password.

If someone get access to your device with a Live USB will be able to mount the partition without being asked for a password.

For that matter you should: Set a bios/boot password. GRUB password. Encrypt your partitions. Set a User password. :D , Security 101.

I think I'll stick with Standard Partitions. Although LVM is an interesting option, I don't think it'll be of much use for my use case
