That will restore the gnome 2 layout but use gnome 3 in the back - which is what centos does.
That way will one way die so see it as transition
sudo dnf install -y gnome-classic-session
You might need to reboot/logout and on login choose classic mode/layout
But again, get used to gnome+dashtodock instead because classic mode is for the old-timers that weren't ready to re-school their users - yet.

That's not a solution. The problem is with the theme, and probably there is no GTK interface for Libreoffice installed. Install that and use a theme that is compatible to Libreoffice. That will solve it.

Hi. KDE user here.
It all depends on your preferences and workflow. Many people find Gnome superior and that's okay. I personally find KDE better as it gives more freedom of choice and it's way more configurable. Plus it doesn't hide stuff.
Specifically about Plasma... the best are the plasmoids. You can as many as you want and there are plasmoids for anything. They're basically applets living inside Plasma.

You can get that with KDE. But you may also want to give Mate and XFCE a go, if Gnome2 look is what you're looking for.
