You should change it. Localhost is the default, you're supposed to name in some another way.

only conky is seen on the picture.
it could be literally any desktop environment, and most likely it is none, just a window manager

You just need to manually create the aforementioned path so you can insert the content. conky will check if it is available to load from but not create it itself

There are books and websites where you can learn this. I don't think is a good idea to learn Openstack or any other important thing like programming or physics in Youtube. Texts are always better.
