I think there are many reasons. One of them is the fact that you're conditioned with Windows in schools, bought computers and wherever, what means that everything is made to work with Windows, you see Windows everywhere, everyone uses it so you assume it's the default

depending on what the school teaches, if it teaches understanding of the computer then you're right, of it teaches how to do stuff in the office job without too much thinking, then learning basic ms office stuff by heart is a good idea

the problem, from my experience in Mexican private and public schools, is that they're actually focused on training you to be a user of MS or, say, Adobe stuff - without the benefit of actual recognition of any kind or without at least taking a look at the alternatives or a more generic approach

Indeed

depends on what your school wants to accomplish - pump out a lot of corporate drones or some knowledgable people, the first path is the easiest, and as most goverments provide funding per student, it's also the most profitable one

MS and Adobe is usually chosen, because "nobody ever got fired for choosing MS", and at the end of the day, people working in these places just don't care, they want to get their paycheck and go back home without too much worries
