That is because you try to launch Veracrypt graphical instance from root user, which doesn't have display assigned. Use sudo.

I'll give it a try, thanks for the explanation :) The weirdest thing happens with it in the normal GUI tho, it asks me for the drive password and then my admin password but even though I'm 100 % sure my admin password is right, it just keeps saying its wrong

The best approach is to have, at least, two users: Root & another user for everyday work with admin rights. So if you need to do something like installing packages or running a command, you can do it with sudo and your password instead of using Root. If anything goes wrong you can always delete the normal user and make a new one. But you can't make a new root, only installing from scratch.

Perfect explanation, thanks man you filled in some of my missing gaps Yeah I was running as a different user for my day to day but before now I didn't have it as admin so I used the adduser command as root to admin this one

I mean it does work on the boot, it turns off the card, but then after a few minutes it turns back on again and I don't know how to find what turns it back on
