And why is a contact managing application using 713MB?
I have like 10 contacts. All the application can do is show some contacts, birthdays and emails.
GNOME Software is not even opened yet it uses 80MB RAM.
There are some massive memory leaks in GNOME apps it seems.

There are none says yum. I don't think 70MB are justified for fetching repos and comparing local packages to repo versions.
Do you use GNOME Contacts?

Tracker keep track of every file you open, every directory you go, it uses a database that with the time might grow and consume lot of ram.

I disabled this feature.
How? It's pretty annoying because it seems to be broken – GNOME Software reports no updates while yum says there are some.
I'd like to disable GNOME Software as I update using yum anyways.

Though the C.S. department uses Fedora instead. They spend every semester vacation on installing the next Fedora release. Then they walk around crying about things that were broken and how long it took them to fix.
I mean, with this many computers in the deparment it's normal that things break.
However one could also opt for RHEL and not care for the next 10 years ( ͡° ͜ʖ ͡°)

The downside is that you have duplicate software, like Okular/Evince and Ark/File Roller etc.
