I have the experience of some apps that stop functioning properly during updates. Two examples for my are firefox and eye_of_gnome. Which are resolved by closing and opening the app.
That's beyond my experience ?

I just want the base KDE shell and the fundamental apps like network manager things. But not every KDE app. Its a pain to keep uninstalling too many apps every time I reinstall.

That's a good question... I did it myself when I installed it. But I'm afraid Fedora forces you to install the whole lot. Manjaro does have a minimal install and a full install.

may be you can list all package you need, them dependencies and install it from a .sh or something like
upload it to a github repo and share it to us

Fedora should have a minimal and a full install. I remember doing so with KDE4 long ago.
